Meet Our Coffee Roaster

Yes, we talk about it like it’s a living person! 

And yes, we roast our own beans in house! We have two spaces in our flagship Lincoln location, the main shop, and the kitchen/roastery. Our coffee roaster, along with all the green beans we source from around the world live here and we roast throughout the shop days. 

What makes your roaster different? Our roaster was created by Bellwether Coffee, an amazing company on a mission to change the way we roast and allow access to more people to be able to roast coffee. 

Key features of this roaster:

  • It is fully electric ~ no gas 

  • There is no vent ~ no gases being released into the environment

  • Zero Emissions - the gases we’re referring to are CO2. CO2 builds up in the beans during the roasting process. Traditional gas roasters have to release at least some of these out through a vent. 

  • Micro batch ~ we roast 6lbs at a time, which is a very small amount compared roasters that can handle 35lbs for example. This allows us to see just about every bean go in and come out and have a high quality control. 

  • Our green bean supply network ~ completely vetted by the Bellwether team and only accessible to Bellwether roasters. Every bean is coming from a farm where we have verified they are making a fair & livable income, the farm is making a positive impact in their local community, and decisions in the farming process are all natural. 


We are so appreciative to have found Bellwether and have access to roasting on a machine that is making a ripple effect difference in the coffee industry.

There is a good chance that your local coffee roaster has a machine that recycles a portion of the CO2 gases that in previous technology, would all be released. 

Steps across this coffee roasting community are all in the right direction as we try to protect what allows coffee to grow in the first place.
